Re-group!

Despite a semi-productive weekend (finished the bridal shower invites!), I still have to make one more custom card.  Have all the parts but can't seem to get my behind upstairs to work on it...

Anyway, here's another Dream Dinner critique:

Pecan-Crusted Chicken:  overall, it's a good dish.  However, if you order the large serving (for 6), you may want to put more panko bread crumbs while you're at the shop because it won't be enough to coat 6 chicken breasts!  Had this happen the first time I ordered a large.  I had to add more bread crumbs (about 1/2 cup) so the other breasts will be nicely coated.  Make sure to spray the tops of the coated chicken breasts with spray oil so they'll crisp up a bit in the oven.

Here's that Rhubarb Strawberry Crisp recipe:

Combine
1 c white sugar
3 T flour
3 c sliced strawberries
3 c diced rhubarb
- put in a buttered 9x13 GLASS dish (if you use metal, if will taste gross - acid will react negatively with metal pan)

Mix until crumbly
1 1/2 c. flour
1 c. butter (can substitute 1/2 of the butter with Smart Balance for Baking)
1 c Oatmeal (regular rolled oats work best - if you use Quick Oats, this topping will be mushier)
1 c. brown sugar
- crumble evenly over the fruit

Bake in a 375 degree oven for 40-50 minutes or until topping is golden brown.
**You can halve this recipe - just half of everything, turns out the same as large.
Serve warm with vanilla ice cream.
